Assalammualaikum,
I like to post every recipe yang i pernah buat because i didn't keep my recipes book forever ,as for now i 've already 3 non- fulled recipes book.Missing in action , so i just made a decision to write it in my blog .Tak sure la kalau in future blog ni hilang , ermmm Mr google could offer some help ,i guess,furthermore i took most of recipes from *him* :).
Why red velvet for today ? because i just love it so much ,i never wrote about it before but my first trial baking red velvet cupcake had failed ,u can see, i used wrong cupcakes cup ,over-beat , and is burning..!!!so i would rather buy it at delicious cafe .:P

then today kak ina (my sister ) puasa today and teringin nak makan red velvet cake , so there we go ,started baking after she came back from work .
last time i gunakan recipes from youtube ,overseas but for today i used recipe dari kak Azlita aziz :), Blog Masam Manis ..

RED VELVET CAKE
Ingredients
1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder
1 tbsp red colouring
1/4 cup soft unsalted butter - 57g
3/4 cup sugar castor
1 egg
1/2 tsp vanilla extract
1/2 cup buttermilk - mengikut kak ita ,i used 1/2 cup whole milk plus 1/2 tbsp vinegar
1/2 tsp vinegar - i used heinz distilled white vinegar 5%
1/2 tsp baking soda
Cream cheese frosting
125g cream cheese
50g unsalted butter
110g powdered sugar - i reduced it to 80g
1 cup fresh cream, whipped until stiff
Method
1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste (I added a little water).

3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk ( the vinegar +milk ) alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to your batter. Stir well with a spatula. Pour into a 6"( i used 9" ) baking pan and bake it for 50mins or until cooked.
6. Let cool on wire rack.
7. Once cool, slice cake into two and spread cream cheese filling.. top it with the rest of your cream cheese too... chill for a few hrs..
Cream Cheese frosting:
1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. In other bowl whisk whipped cream until fluffy ,then combined together, stir through with a spatula.
Jangan bimbang kalau cake merekah , sebab i punya pun merekah hahahahhah, no sebab kak ita cakap it's depends to your oven .and memang sangat remeh nak frosting sebab the cream so lembik :P so after cream cheese siap terus kena filling and decorate it. Thats why we really need to cool down first the cake for few hours or semalaman ,tapi kak ina and i gelojoh sangat nak makan hahah, hentam sekejap je, but still turn out nice.
Please don't compared our velvet cake with kak ita ,dia dah pro.:)
as for 2nd trial i'm happy and satisfied .
